Mother’s Day brunch – Pamper your mom with a late morning meal on this special day

Mother’s Day gives Mom an excuse to sleep in and take it easy. Make sure that when she wakes up, you have a scrumptious meal waiting. The assembly and the presentation of the food can be simple, but with a few tricks it can look fabulous. Whether feeding Mom alone or serving a crowd, take tips from trim&TERRIFIC cookbook author Holly Clegg.

• Buy pre-made fruit trays from the grocery store.

• Wrap forks in cloth or paper napkins and tie with a ribbon ahead of time.

• If serving a group, offer smoothies in small glasses on a tray or platter as a starter.

• Make menu items such as muffins and breakfast casseroles ahead of time. No messy cleanup on the day of the brunch, and you can actually enjoy your guests.

• Never put a refrigerated glass baking dish directly into a preheated oven as it can cause the glass to crack.

• Pancakes can be frozen. Just pop them in the microwave for breakfast in a snap.

• For a quick syrup, heat a berry “real fruit” jam and pour over each portion.

You can find the brunch items pictured above in the following Holly Clegg cookbooks.

For an affordable fun gift that even the kids can assemble, make a Brown Sugar Scrub. Simply combine equal amounts of olive oil and brown sugar. It leaves hands and body feeling soft and refreshed.
