Slice and Bake Chocolate Chip Cookies – Make the dough and refrigerate to bake later at your convenience.

6 Tbsp. butter
1/2 cup confectioners’ sugar
1/2 cup light brown sugar
2 tsp. vanilla extract
1 egg
2 cups all-purpose flour
1 tsp. baking soda
2/3 cup semisweet chocolate chips
1/2 cup chopped pecans

In mixing bowl, beat butter, confectioners’ sugar and brown sugar until blended. Add vanilla and egg, beating until creamy. In small bowl, combine flour and baking soda. Add to sugar mixture and beat until well mixed. Stir in chocolate chips and pecans. Mold dough into two 12-inch logs and wrap in plastic wrap. Refrigerate. When ready to bake, preheat oven to 350 degrees. Coat baking sheet with nonstick cooking spray. Cut dough into roughly 1/2-inch slices and place on prepared pan. Bake 8 minutes or until done. Makes 36 cookies.
