Dish: Southfin Southern Poké’s Crawfish Bowl

The Southfin Southern Poké team discovered something during Lent. Diners loved having crawfish as an optional protein for the restaurant’s wildly popular Hawaiian poké bowls. “Our top sellers have always been the Spicy Salmon and Wasabi Gras bowls, but the Crawfish Bowl was right up there,” says Director of Operations Brad Mire.

Now a regular menu item, the Crawfish Bowl is everything you love about traditional crawfish recipes, delivered in street-food-salad form. Cold sautéed Louisiana crawfish tails are spooned onto a base of white or purple rice and topped with a corn and bell pepper mix, onions, tomatoes and purple cabbage. Green onions, crispy shallots and a drizzle of Fin Boil Sauce—mayo spiked with seafood boil—finish the dish. As with any menu item, the base, sauces and toppings can be tweaked to order.
