Dish: Rouj Creole’s Lobster Tagliatelle


One of the hottest new restaurants to open in 2019, Rouj Creole is a hip, modern spot that celebrates—and elevates—the global foodways that influence Louisiana’s Creole cuisine. The menu isn’t a retread of French Creole classics, but an exploration of new territory that includes ingredients and techniques from the cuisines of Italy, Africa, the West Indies and other places.

The lobster tagliatelle, for example, pairs a sweet, tender 5-oz. Bahamian lobster tail with squid ink pasta and a smoky, Calabrian chile cream sauce. It’s rich and celebratory, and a great way to mark this festive month.

There’s lots more to try, too. Rory Wingett and Tyler Guelfo introduced several new menu items in late November.
