Dish: Kona Jule

Fresh fish meets Asian flavors in the light but hearty Kona Jule at French Market Bistro, a popular Highland Road eatery. Chef Borivane Khemmanyvong starts by tossing fresh mixed greens with shredded carrots, cucumbers, edamame, peanuts, crispy fried rice noodles and cilantro in a house-made sweet soy vinaigrette. Customers choose between seared, juicy yellowfin tuna and tender-roasted salmon to accompany the salad. Khemmanyvong, a native of Laos who has been in the Bistro kitchen for more than a decade, says the simple lunch or dinner item checks lots of boxes. “It’s healthy, filling, fresh and full of flavors people like,” he says. “Since we added it about six months ago, it’s been one of our most popular dishes.”
