In the kitchen: Coconut Apricot Persimmon Smoothie with Ginger

Who doesn’t love a good smoothie? They are quick, easy and pack in nutrients without skimping on flavor. The beauty of blending your own concoctions is the freedom to customize your smoothie for your current health needs or the season at hand—and this creation by Leigh Ann Chatagnier is far from your typical strawberry banana.

Persimmons are high in fiber and a great source of vitamins B6, C and A. With the addition of fresh ginger and its immune-boosting properties, this smoothie is an excellent supplement for the peak of flu season. Garnish with some shredded coconut, and you’ve got yourself a beautiful beverage to keep you healthy and satisfied.


1 persimmon, peeled
2 ripe apricots, pitted and peeled
1 tsp. fresh ginger, grated
1 Tbsp. shredded unsweetened coconut
1⁄2 cup unsweetened vanilla almond milk
4 ice cubes
Place all ingredients in a blender and blend until smooth. Serve immediately.
