Dish: Tsunami’s Lemonfish

Opened a decade ago on the sixth floor of downtown’s Shaw Center for the Arts, Tsunami is one of the Capital City’s most popular restaurants. Festive shareable eats and dramatic riverfront views make it a top spot for date nights and special occasions. Amid Tsunami’s embellished sushi rolls and composed Japanese entrées is an ingredient-driven dish that screams modern simplicity—the Luscious Lemonfish. Fresh Gulf lemonfish is served sashimi style and gilded with paper-thin slices of lemon and jalapeno, along with drizzles of ponzu sauce. Executive Chef Tracy Nguyen and her team make the sauce in house from lemon, citrus seasonings and reduced sake. Nguyen says lemonfish has the perfect texture for this kind of tidy preparation. “It’s firm and great for sashimi and is also soft and juicy,” she says. “The lemon, jalapeno and ponzu sauce pair bring out the fish’s natural flavor.”
