Dish: Crabmeat Maison

A longtime favorite at Galatoire’s Restaurant in New Orleans is Crabmeat Maison, the expertly composed, generously portioned cold crab salad that has led off the night for generations of diners at the famed eatery. Similarly, fans of Galatoire’s Bistro in Baton Rouge can’t get enough of this appetizer’s delicate flavor and texture. Chef Kelley McCann follows the classic formula: carefully combining jumbo lump Louisiana crabmeat with house-made mayonnaise, a touch of the restaurant’s signature Creole mustard vinaigrette, capers, green onions, parsley, and salt and pepper. “We have this really great product,” he says. “We don’t want to overpower it. We just want to add to the flavor.”
