Dish: Our Mom’s Restaurant’s Rockin’ Roast Beef Po’Boy


Comfort foods have kept us sane recently, and what sounds more comforting than a gooey, bib-worthy roast beef po’boy? A recent comfort food episode of the Cooking Channel’s Food Paradise featured Our Mom’s Restaurant’s Rockin’ Roast Beef Po’Boy, the brainchild of co-founders Trent Fresina and J.P. Ngo. The signature sandwich is prepared with marinated round roast slow-cooked for six hours.

“What makes it ‘rockin’,’” says Fresina, “is the candied jalapeño cream cheese spread. We make candied jalapeños in house and blend them with cream cheese and spices.” Delectably flaky Leidenheimer bread adds toothsome balance to the creamy, beefy mash-up inside. The sandwich is also available with fried or roast chicken.
