Dish: Chef Celeste’s Island Shrimp Flatbread

Open since May, Chef Celeste’s Bistro in the Main Street Market serves a lineup of breakfast and lunch items in a sleek, retooled space at the market’s south end. A standout is the Island Shrimp Flatbread. Tender sautéed Gulf shrimp and aromatic vegetables are tossed in owner Celeste Gill’s signature honey mustard dressing and served over toothsome flatbread made fresh in house. The yummy combo is topped with Parmesan cheese, then run through the broiler. The final addition is a tangle of dressed fresh lettuce and spinach. “It’s like a salad on a pizza,” says Gill, who also hosts the cable and YouTube show Cooking up Louisiana Treasures. “No fork needed,” she adds. “Just your fingers.”
